We’re storing over 11 million pounds of potatoes, and right now everything depends on temperature, humidity, and airflow. In this video we go deep into our potato cellars to check moisture levels, look for rot or sprouting, and make sure the fans and humidifiers are doing their job.

Some of these potatoes have to last until May or June, so if anything goes wrong now, it could cost us everything. We check three different cellars, climb up on the piles, and inspect the tunnels, vents, ceilings, and control systems to see how the crop is holding.

Prices are low right now, so we’re really hoping these potatoes can be stored safely until the market improves.
