Welcome to Day 4 of our potato harvest! Today, I’m out in the field chopping potato vines right alongside a couple of coyotes, all while keeping a lookout for snakes. It’s never a dull moment out here! After finishing up in the field, we move on to a big project—relocating and setting up all of our potato cellar equipment in a brand-new cellar. With everything in place, we start the huge task of stacking millions of pounds of potatoes. There’s a lot of hard work going on behind the scenes, but it’s all coming together as we push through the harvest.
